Every fisherman
wishes to be able to catch a rockfish near Christmas for the
family to enjoy. If you get lucky, try this dip recipe.
1 small
garlic clove minced
1 small shallot minced
1 tablespoon minced green and/or red pepper
1 teaspoon dried parsley
1/2 teaspoon Old Bay seasoning
1/2 teaspoon horseradish
1 medium tomato chopped
1/4 cup whipped cream cheese
16 ounces chunky bleu cheese salad dressing
2 cups cooked flaked rockfish
In medium
bowl, combine cream cheese and bleu cheese dressing. Add the
parsley and Old Bay, then horseradish, garlic, shallots, tomatoes
and peppers.
Finally, fold in rockfish. Chill until ready to serve. Dip is
best when used the day it is made. It goes great with crackers,
chips and vegetables.
