Baked Bluefish with Onions and Potatoes


• 2-3 pound bluefish, scaled and gutted with head and tail removed
• 1 large onion
• 5 medium sized potatoes
• 4 slices bacon
• 1 tablespoon flour
• a few pats of butter, cubed
• 1/2 cup water
• salt and pepper to taste

Preparation:

Peel the potatoes and cut into rounds. Slice the onion.

Place the fish into a lasagna pand or baking dish. Score the fish on the side that if facing upward, and place cubes of butter on top.

Salt and pepper to taste. Place the bacon over the fish .

Surround the fish with potatoes and onions.

Mix 1 tablespoon of flour with a half of a cup of water and pour over the fish, onion, potatoes and bacon.

Cover the baking dish, and bake at 350 degrees until the fish is brown. Baking time is usually close to 1 hour.

This recipe can be used for rockfish as well.
